The Trailblazer Grille in Highland Lakes, Texas, is a well-known restaurant across this beautiful region that has been featured time and time again for its unique dishes and exceptional food. It’s been named in the Top 10 Burger Places in America by Parade Magazine and Featured in the Texas Highway Magazine.
Specifically, the location in Burnet, Texas, is known for its incredible pot pie crust creations. This golden crust recipe is so flaky and delicious you won’t even need to cut it with a knife to get to the chicken and vegetables underneath.
The restaurant is owned by Trace and Liz Catlin, who are most known for this pot pie location. First, opening a gourmet consulting business in the food industry in 2000, they decided to start a restaurant would be fun. So they opened the first Trailblazer Grille shortly after the start of their original business.
Now they are making 40 or so of their famous pot pies each day, and people come from all over the region to enjoy them.
While that is one of the best reasons to visit, the menu offers much more. The central theme here is that everything is home-style cooking, and that means lots of scratch-made items that are made with high-quality, local ingredients.
And with home-style cooking comes a home-style experience. Everyone here, from the staff to the patrons, makes you feel like family!

Like a true Texas restaurant, you will come in hungry and leave stuffed.
With much more to this location than just food, you’ll experience a home-style welcome and an incredibly unique menu. You’ll also find the Candy Rush Emporium and Taste of Texas here. It’s super fun to spend some time exploring this location.
With various events—from live music to game night—you’ll find more than just great food! Coming here often, I’ve had a great time! Whether it was enjoying the nightly live music, poker night, or a charity shindig, Trailblazer Grille is my go-to spot for a fun night out!
Overall, the vibe of this cool restaurant is positive, updated, and relaxing, just like you’re sitting in your mother’s home at the table eating home-cooked food and enjoying a quality fun time.
Trailblazer Grille: Menu & Drinks
When it comes to the menu, I haven’t gone wrong with anything I’ve tried, but I certainly loved a few of their items.
The Texas Nachos are at the top of the list! This is something you will want to share because it is huge.
As for appetizers, I also really like the Tater Wedges with their green onions, bacon, and ranch dressing.
And when you are looking for a sandwich, I recommend the Blazer Grilled Chicken Sandwich. It is so tasty and has caramelized onions on it with a red pepper aioli that is packed with flavor. It also has a mild poblano pepper on it that offers a bit of kick.
All that aside, I have to say some of the best foods are the chicken pot pie and the Blazer Signature Meatloaf (it has a nice sauce).
Finally, there’s an incredible drink menu. You’ll find all of your favorites on tap and bottled. I enjoyed the Thirsty Goat Craft Beer that is on the menu, and my friends love the Stash IPA.
And if you’re into wine, there are also numerous wines to try.
Local Tips
- If you are a civil servant or a veteran, let them know. They offer a 10% discount on your meals.
- Check them out during happy hour! I have come to get the $3 house wines and $2 off appetizers during this time (every Monday through Friday from 4 to 6 pm).
- There’s a full kid’s menu and candy shop here.
- They offer an incredible selection of desserts and pies. Keep in mind if you want to bring a whole pie home, you want to order 24 hours in advance.
