When Bill and Kelli Davis dreamed of an eatery serving specialty coffee and tasty breakfast lunches, they knew they needed a catchy name. 

Drawing from Garden Valley's Gold Rush history, they opted for an infamous cowboy outlaw for their name. And in 2009, Wild Bill's Coffee and Bistro opened to rave reviews. 

Wild Bill's Coffee and Bistro has become a local staple in the picturesque beauty of the Payette River. The eatery continued to grow, and in 2012, it moved to a larger facility. The larger facility enabled Bill & Kelli to enlarge their menu and entertain more locals and vacationers.

A visit to Wild Bill's Coffee and Bistro on a Garden Valley getaway is the perfect kickstart to any morning in the Gem State.

A must-try on their menu is the rainbow trout breakfast. This hearty dish is a true Idahoan delight, featuring flawlessly cooked rainbow trout, two eggs cooked to your liking, and perfectly seasoned potatoes (or hashbrowns, or both if you prefer!). It's a satisfying way to start your day without feeling stuffed to the gills! 

For a stick-to-your-ribs meal, try Wild Bill's famous homemade biscuits, topped with two sausage patties and two eggs and smothered in their sausage gravy. This breakfast is guaranteed to power you through your day!

Regarding beverages, Wild Bill's offers a selection of coffee drinks, teas, and espresso-based beverages. The Latte or Shot in the Dark were some of my favorites. They also have nearly forty flavor shots to allow your inner mad scientist to take over!
