Bill and Kelli Davis needed a catchy name for their restaurant. They chose Wild Bill's Coffee and Bistro, drawing upon Garden Valley's Gold Rush history and an infamous cowboy outlaw. The eatery opened in 2009 to rave reviews, offering hot coffee and hearty breakfasts and lunches. 

In 2012, it moved to its current location, which offered more room, enabling Bill and Kelli to enlarge their menu. The restaurant continues to be a Garden Valley staple, especially since it is near area landmarks and attractions. Before visiting Weilmunster Park, get your morning coffee and a hot breakfast at Wild Bill's. And with Idaho Sleigh Rides and the Starlight Mountain Theatre a short drive away, planning your vacation itinerary just got simpler. 

The eatery opens at 7 AM, making this the perfect breakfast destination before a day of exploration and adventure. And since it stays open until 6 PM Wednesday through Saturday, it is an ideal spot to refuel and reconnect after a day in the mountains. 

The eatery often hosts special events like Pajama Party Brunch with mimosas and a photo booth. Its Facebook page also features weekly dinner specials, adding more appeal to the eatery.

A visit to Wild Bill's Coffee and Bistro on a Garden Valley getaway is the perfect kickstart to any morning in the Gem State.

A must-try on their menu is the rainbow trout breakfast. This hearty dish is a true Idahoan delight, featuring flawlessly cooked rainbow trout, two eggs cooked to your liking, and perfectly seasoned potatoes (or hashbrowns, or both if you prefer!). It's a satisfying way to start your day without feeling stuffed to the gills! 

For a stick-to-your-ribs meal, try Wild Bill's famous homemade biscuits, with two sausage patties, eggs, and sausage gravy. This breakfast is guaranteed to power you through your day!

As mentioned, Thursday Night Dinners are not to be missed! The rotating menu features three courses that are sure to satisfy. Appetizers might include house-made bruschetta on crostini bread with mozzarella pearls. The entree may be their buttered and honeyed pork loin glazed with a balsamic glaze. It comes with garlic mashed potatoes and roasted asparagus. Capping off the dinner is dessert like Wild Kathy's homemade Pecan Chocolate Cake Ala Mode.

Regarding beverages, Wild Bill's offers a selection of coffee drinks, teas, and espresso-based beverages. The Latte or Shot in the Dark were some of my favorites. They also have nearly forty flavor shots to allow your inner mad scientist to take over!
