Earl Ninsom, a Thai-American chef, was passionate about sharing the depth and diversity of Thai cuisine with the world. He began this endeavor in Portland with his restaurant, Langbaan.

Based on seasonal availability, the menu changes and grows to represent not only Thai flavors but the flavors of the Pacific Northwest as well!

With the seasonal menus, yours will almost certainly look different from those of the past.

Still, some standouts that have appeared before include seafood, such as Kanom Krok, with Hokkaido scallop, coconut cream, lemongrass, lime leaf, and crispy rice cup.

For heartier tastes, there's also Sai Ua, a Northern Thai sausage topped with Asian pear, fig prik noom, and rice crisps. Or Yum Kor Moo Yang, a grilled pork jowl with Japanese eggplant, pickled apple, fennel, chicharron, and quinoa.

  • Reservations are released in one-month blocks. Bookings become available at noon on the 15th for the entirety of the following month.
  • A 20% gratuity is added to your meal.
  • If you can't make it Friday-Sunday when Langbaan is open, try the Phucket Cafe.
