After graduating from the Centre Apprentissage Professionel, Gilbert spent time in the French Army, Club Med as a chef and musician, and various restaurants and patisseries throughout the United States before opening Cuvee in 2004.

Gilbert's French take on pork chops, Filet Mignon de Porc a l'Alsacienne, is popular. Medallions of pork tenderloin breaded and sautéed, served on a bed of braised red cabbage, and accompanied with a charcuterie sauce and housemade pasta are sure to please.

When visiting Oregon, it's considered rude not to indulge in some delicious seafood. Cuvee Restaurant offers a poisson du jour based on whatever fresh catch comes in that morning. It is cooked to Gilbert's exact specifications. 

There's also the Coquilles St. Jacques—scallops and shrimp cooked in a leek, carrot béchamel sauce topped with melted Gruyère cheese.
