Growing and nurturing a bonsai tree is an art. The caretaker must be patient, committed to excellence, and have a long-term vision. And in many instances, it's the caretaker who is transformed more than the tree. 

For these reasons, co-owners Graham Hart and Keela Smith named their brewery Bonsai Brewing Project. "It's about being able to carefully manipulate as you go because you see how it's growing and how it's doing," says Hart. "It's not about growing bigger; it's growing stronger." 

Bonsai Brewing Project first opened in a shopping mall but ended up at its current location outside of Whitefish after a series of unexpected events. 

With a name steeped in Asian culture, one would think they serve Japanese beers, which they don't. This microbrewery cranks out creative variations on favorites with catchy titles like Plead the 5th and Breakfast in Paradise, to list a few.

While a small brewery, Bonsai Brewing Project has grown to produce 500-600 barrels a year. But as Hart alluded, their goal is not to become a bigger brewery but a better brewery.  

Whitefish is known for its spectacular outdoor opportunities, where visitors seek a cozy spot to unwind after a day of adventure. Bonsai Brewing Project, with its independent spirit, offers just that. 

Over the years, the Bonsai Brewery Project has a proven track record of being a community hub where friends gather, stories are shared, and memories are made. Oh, and where the beer tastes fantastic.

Vibe 

Bonsai Brewing Project exudes an inviting ambiance reminiscent of a beer garden. The rustic wooden exterior and strategically placed greenery have a home-like appeal. Such warmth encourages visitors to step inside. 

Once you do, you're greeted by an open space with a touch of industrial chic blended harmoniously with warm wooden accents.

Windows let in abundant natural light, making the space airy and fresh. Wooden tables paired with comfortable seating invite guests to settle in, and walls adorned with local art add a personal touch. 

The atmosphere is a mix of relaxed sophistication and rustic charm, making it an excellent spot for a quiet afternoon with a book or an evening out with friends.

And on nice days, you'll want to settle outside to enjoy your brew, food, and nature.

Bonsai Brewing Project: Menu & Drinks 

If one thing stands out at Bonsai, it's the sheer variety and quality of the brews. While their brew menu varies by season and popularity, here are some examples of beers at the time of this review.

  • Farang Tang. Those with an adventurous spirit will want to try this brew. It's a take on Thai iced tea with toasted rice, black tea, lactose, and spices.
  • Indy 500. This hazy IPA represents their 500th brew with 100% Vienna malt and hopped with Saaz, Cashmere, and Citra. Definitely a choice in the Winners Circle!
  • 247 Candles. This barrel-aged porter is perfect for those with a sweet tooth. With its birthday cake vibe, this dark beer contains lactose, cocoa, vanilla, almond, and coconut. 

While their brews alone are worth the visit, their food menu complements the drinks perfectly. 

The Bonsai Burger is a hit, made from locally sourced beef and layered with all the right toppings to satisfy a hearty appetite. 

The various Soul Bowls will satisfy the hungriest appetite. The Fly The Coop consists of grilled chicken breast over Jasmine rice, spring greens, red onion, house ranch dressing, black bean and corn salsa, sweet chili slaw, BBQ sauce, and green onion. 

They also have a variety of snacks, salads, sandwiches, and hot dogs, which they call "doggies."

Whether you're passing through or vacationing in Whitefish, stop by Bonsai Brewing Project. You'll discover craft beer brewed to perfection, a laid-back vibe, and food good for the soul and stomach. 

Local Tips

  • Bonsai Brewing Project is kid and dog-friendly. Pups even get a treat!
  • Bonsai often has limited-edition brews that aren't always on the menu.
