The story of this eatery begins in Naples, New York, where 8-year-old Adam Ross discovered his life calling baking in his mom's bakery. However, due to laws involving child labor, Adam had to find another outlet. So, he created Adam's Dog Biscuits, and his journey into becoming began.

After graduating from the Johnson and Wale culinary school in Denver, Adam found work as a chef in Park City. He contributed to the success of Bistro 412 before launching his restaurant, Twisted Fern.

Adam's vision for the eatery is defined in his website's mission statement: "Creative, Conscientious New American Cuisine." As the restaurant's name alludes, Chef Adam adds "twists" to many classics with a menu that showcases wholesome, natural food. Equally impressive are his efforts to support special dietary needs, such as vegetarians, vegans, and gluten-free eaters.

During summer, the tree offers natural shade, and the white fairy lights create a magical atmosphere at night. On chilly evenings, heating elements keep diners warm.

Should you prefer to dine indoors, the ambiance and decor will impress. It's the balance of featuring rustic Utah themes with a hint of industrial tossed in for good measure. The bar sports a stained wainscot that blends with the dark countertop, while wood trim and shelving dot the back wall. Chef Adam plans his menus around seasonally available foods from local purveyors. And if they can't supply vegetables for his meal, he searches the family garden for what he needs. Entrees vary throughout the week because his menus rely on what's available. With that in mind, let's explore some of the favorites the Twisted Fern offers.

A popular starter is fried Brussels sprouts served with apple Fresno hot sauce in a garlic lime emulsion. Another hit with patrons is the Spanish octopus, which showcases blackened octopus, antipasto, and black sesame brittle.

When it comes to the main entrees, the options are creative and varied. Vegetarians will want to feast on the General Tso entree. It features crispy cauliflower and eggplant, coconut rice cake, charred

scallion relish, and peanuts. The textures and spices will have your taste buds dancing!

Meat lovers will want to try the Double Wide Pork Chop. The meat is cooked perfectly and comes with roasted potatoes, green beans, and arugula salad.
