Since 2003, Hildegard's German Cuisine has been a culinary landmark in Huntsville. Hildegard Collins founded the restaurant, which pays homage to her German heritage and scientists who transformed Huntsville into Rocket City.

She immigrated to the United States after World War II and worked at Redstone Arsenal. On Sundays, she cooked German food for neighbors and friends. With success, she opened a small cafe serving salads, sandwiches, and Bavarian dishes. 

Years later, Hildegard sold it to her daughter, Sabine, who expanded the menu and remained committed to carrying on family recipes. 

In 2016, Sabine sold Hildegard's to Amy Miller, who combined her passion for cooking with her ties to German culture through relatives. The result was a fresh energy that preserved the restaurant's legacy. 

Today, Hildegard's German Cuisine offers Bavarian-style comfort food, from schnitzels and sausages to rich gravies and house-made desserts.

The downtown location is close to some of Rocket City's popular landmarks. Such convenience makes grabbing a German meal after visiting Alabama Constitutional Hall and Harrison Brothers Hardware easy.

One standout menu entree is the Jaeger Schnitzel. The chefs take a hand-pounded, breaded pork cutlet and pan-fry it until it’s golden brown. A brown mushroom gravy covers the schnitzel, making for a soul-satisfying meal.  

The Bavarian Schnitzel is another crowd-pleaser featuring cheese, mushrooms, and onions, while the Geschnetzeltes, or "hunter's stroganoff," showcases brined pork, sautéed mushrooms, onions, creamy sauce on a bed of house-made spaetzle. Both are the ultimate comfort dinners!

No visit is complete without sampling the homemade desserts. The apple strudel tops the list, featuring hand-cut fruit wrapped in flaky pastry with the right sweetness. Another favorite is the Black Forest Cake, combining layers of chocolate, whipped cream, and cherries. 

For a complete German dining experience, order a beer or glass of wine. The Hofbräu Dunkel is a popular brew known for its smooth, malty flavor with sweet and bitter notes. Those seeking something lighter may enjoy the König Ludwig Weissbier, a refreshing wheat beer with hints of fruitiness and spice.
