Since 2009, the Thistle restaurant has been serving locally sourced, farm-to-table dishes, making it a must-visit for food lovers.

Thistle is the place to be if you want an authentic Oregon dining experience. This restaurant showcases the region's bounty with an ever-changing menu inspired by the season and local produce.

A dish that guests rave about is the renowned Willamette Valley Mushroom Risotto. This meal is a symphony of flavors with perfectly cooked risotto, a medley of locally sourced mushrooms, and a generous sprinkle of Parmesan.
