Did you know there's a place in Dillon, Colorado, where you can drink wine and help animal shelters simultaneously? Welcome to Saved by the Wine!

While this may sound too good to be true, it was the dream of ski instructors Erin and Allison. They channeled their passion for wine and animals into a successful business model on so many fronts. 

"Our mission is to provide a place for friends and family to come together and to better the lives of animals by donating 2.5% of net profits to animal shelters."

Saved by the Wine, also known as SBTW, opened its doors in 2020 and has been a beacon of refined cuisine, world-class wines, and ambiance in Summit County. 

Erin and Allison's drive is to deliver a unique, immersive food and wine experience. To do this, they pay meticulous attention to detail throughout the establishment. This is evident from the carefully selected wine list showcasing vineyards to the thoughtfully crafted menu at SBTW.

Every team member shares this dedication to the wine and food experience, contributing to Saved by the Wine's warm, friendly, and knowledgeable service hallmark. 

The founders believe every guest should leave with a greater understanding and appreciation of wine, and the team goes above and beyond to ensure this.

As you near Saved by the Wine, you sense it greeting you from afar like an old friend welcoming you home. 

The exterior is an elegant display of Colorado-inspired architecture that merges harmoniously with the surrounding landscape. 

The interior design is a tasteful balance of rustic charm and contemporary elegance, creating a casual and upscale ambiance. The open ceiling makes the room appear larger, while an overhead wood beam grounds the senses in Colorado's outdoor wonder. 

Comfortable seating arrangements throughout the space invite patrons to unwind and immerse themselves in the experience. 

SBTW is where friends converge, families savor fondue, and dogs relax with their owners on the deck. Speaking of the outdoor area, it offers breathtaking mountain views, and the fireplace is perfect to cuddle around at night.

Saved by the Wine: Menu & Drinks

When one thinks of wine bars, images of an environment where pretentiousness is thick on the wind come to mind. While Saved by the Wine offers exquisite service, wines, and pairings, it's different from other wine bars in that it welcomes young and old, well-to-do clientele with blue-collar folks with grace. 

Let's start with food offerings before diving into their wine offerings. SBTW offers a rotating menu of lighter fare that pairs perfectly with their wines. Examples are their charcuterie boards, truffle gnocchi, vegetable pot pie, and cheese fondue with steak tips, to list a few. 

If you're traveling with your family, SBTW is also an excellent place for children! With fun drinks like Kid's Cosmo that combine lemonade with cranberry juice and topped with a gummy bear skewer, they'll be in for the time of their lives! 

When it comes to wine, SBTW has an impressive selection. You'll be in for a treat whether you opt for a single glass or bottle. For the adventurous, opt for any one of their flights. Variety is the key here, as there are so many to consider. A popular choice is the Foodie Flight with cheese pairings for Caposaldo Prosecco, St. Francis Chard, Bonfanti Malbec, and Pessimist Blend wine. 

Bourbon lovers will want to taste the Whiskey Flight with four local offerings. In short, SBTW has a drink for everyone on your list!
