The restaurant traces its roots to Eric Grundel, who converted the old Ivywild schoolhouse into Edelweiss in 1967. In 1969, he hired a German immigrant from Heidelberg, Helga Schnakenberg, who rose through the ranks to become manager. She was also instrumental in crafting the tried-and-true German recipes that would put the restaurant on the proverbial culinary map.

When Helga married Gary, the couple purchased the eatery in 1989, and as a family, they have continued building Edelweiss’s legacy.
